Today was one of those days, I was running on empty in the sleep department and I just needed a little pick me up in the afternoon. I had some avocados about to go bad so figured I’d try and use them up. I’ve seen recipes for avocado pudding before so now was the perfect time to try it out! I’m so glad I did. This little treat was so easy to put together and is jam packed with healthy fats (the kind that can lower blood cholesterol levels), fiber and antioxidants…not to mention the rich chocolate flavour and creamy texture!
Ingredients:
1 ripe avocado
2 tbsp unsweetened dark cocoa powder
2 tbsp chia seeds
3-4 tbsp pure maple syrup
1/2 cup unsweetened almond milk (or milk of your choice)
Directions:
Combine all ingredients in food processor or blender and blend until smooth.
My daughter and I had ours for an afternoon snack topped with shredded coconut, hemp seeds, more chia, and craisins. You can eat it on it’s own or be creative with the toppings! Enjoy!
