You’re probably thinking, does this girl have anything else in her kitchen other than avocados?? I think the majority of my posts so far have contained an avocado, but that is what happens when you buy a bag of avocados at Costco and need to use them up before they go bad! So let me share this new favourite with you.
This avocado “mayo” is the tastiest mayo/dressing you can make that actually has the same creaminess and flavour as your favourite creamy salad dressing or sandwich spread. It is beyond simple to make too:
Ingredients
- 1 Avocado
- 1 clove Garlic, peeled
- ¼ cup roughly chopped cilantro
- ¼ cup plain greek yogurt
- 1 tablespoon fresh lime juice
- 3 tablespoons Olive Oil
- ¼ teaspoon Kosher Salt
- ¼ teaspoon Ground Black Pepper
- Water
Directions
Add all ingredients, besides water, to a food processor or blender and blend until smooth. Add water until desired consistency is reached.
Keep in an airtight container in the fridge for up to 7 days.
** I made mine thicker, more of a mayo consistency. When needed for salad dressing, I just thinned out the amount I needed with a bit of water by whisking in a small bowl.**
