This recipe will satisfy your craving for a creamy coleslaw but is a healthier alternative using fat free Greek yogurt. Pair this coleslaw with fish (like this Cajun Panko haddock), use it for a topping on fish tacos, use it as a sidedish to bbq’d fare, or be like me and eat it straight out of the bowl for lunch while trying to get food for my 2.5 year old and feed my 7 month old simultaneously 😜
Creamy Greek Yogurt Coleslaw by Jessica Hawes, RD April-20-2016
Dressing
1 cup fat free plain Greek Yogurt
1/4 cup honey
2 Tbsp apple cider vinegar
Salt and freshly ground black pepper
Coleslaw
1 small cabbage, shredded
1 1/2 cups matchstick carrots
2 large apples (I used honey crisp), sliced into matchsticks (about 3 cups)
1/4 cup fresh cilantro, roughly chopped
3/4 cup sliced almonds
Directions
1. Combine dressing ingredients in a medium bowl and whisk until combined.
2. Add the coleslaw ingredients to the bowl and mix to coat with the dressing. Serve immediately or refrigerate until served.
