It’s a nice quiet Sunday at my house today. The baby is asleep, the girls are out with daddy, and I’m left in a peaceful kitchen to whip up some food for baby. I’ve been wanting to add more protein options into his foods because he’s mostly been getting fruits and veggies when feeding himself. I came up with these turkey meatballs with spinach, sweet potato, and applesauce which should do the trick!
Recipe:
Turkey, Sweet Potato and Spinach Baby Meatballs
Yield: 24 mini meatballs
Prep time: 10 minutes
Cook time: 20 minutes
Ingredients:
1 lb ground turkey
1 medium sweet potato, cooked and mashed
1 handful spinach, finely chopped (I used my food processor)
1 clove garlic, minced
1/2 cup baby rice cereal (I use the organic Baby Gourmet brand)
1/4 cup unsweetened applesauce
Directions:
Preheat oven to 350. Line a baking dish with foil and lightly grease with cooking spray.
Mix all ingredients together in a medium size bowl.
Form into small meatballs and place prepared baking dish.
Cook for 20 minutes or until meatballs reach an internal temperature of 165.
Serve and enjoy!
*I kept 4 in a container to serve to my little guy over the next few days. The rest I froze in vacuum sealed packages of 4 so I can thaw out a few at a time over the next little while.
