I did it guys! I actually came up with a recipe that turned out good (like it’s good for a baby but I even enjoyed them)! My little guy is 8 months old now and has been eating a variety of foods, textures, and flavours BUT I was feeling like it was getting a bit repetitive at mealtimes. So, I came up with these little veggie cakes to introduce a couple new foods to him and to add in the rotation of easy, healthy options I already have for him. Check out the recipe below!
Curry Cauliflower Chickpea Cakes
Prep 10 minutes
Cook 20 minutes
Yield 16
Ingredients:
1/2 head of cauliflower
1 15 oz can of chickpeas, drained and rinsed
2 eggs
1/2 cup infant rice cereal
1 tbsp curry powder
Directions:
1. Preheat oven to 350 and line a baking sheet with parchment paper
2. In a food processor, add cauliflower and pulse to a rice consistency. Next, add chickpeas and pulse until blended. Add in eggs, rice cereal and curry powder and pulse just until combined.
3. Form 1-2 tbsp balls (depending how large you want them) with the batter and pat down into a cake on the baking sheet.
4. Place them in the oven for 18-20 minutes, let cool before serving.
Store in a container in refrigerator for 5 days, or freeze and thaw individually as needed!
